Mr. Muhenaka Ozaki raises the renowned “Ozaki Gyu” Wagyu. All Wagyu beef is beautifully marbled, but Ozaki Gyu achieves an almost otherworldly balance of flavor, tenderness, and umami. Mr. Ozaki personally oversees every stage of his cattle’s life — entirely on his own. His cattle are fed rice straw and hay, supplemented with potatoes and sugar cane. This seemingly “simple” diet paradoxically produces a clean, sweet fat with an exceptionally low melting point (it begins to melt at around 22°C — the temperature of the mouth). Tasting Ozaki Gyu is a multi-sensory experience that engages all five senses. Its marbling (shimofuri), to the eye, appears as an intricate lace of pearly-white fat woven through the deep ruby-red meat.

This dish was created thanks to our Chef Alex Lu Sell, who doesn’t like sweet desserts. Every time others ordered dessert at the end of a meal, he found himself struggling with the choice. That’s how the idea came about to add two simple meatballs with mashed potatoes to our menu. To elevate our meatball, we crafted an umami flavor using two types of meat, rice, and koji.
